Celery Juice 101
By now you've probably heard a little bit about the celery Juice hype & have possibly even started consuming a fresh glass of celery Juice each morning.
Anthony William, aka The Medical Medium speaks to benefits that include "clearer skin, improved digestion, less bloating, sustained energy, better mental clarity, weight loss, and stable moods, just to name a few".

We decided to explore the benefits a little further...and I also began a 21 day celery Juice protocol so we could share both our research and our personal experience with you!
First, a little bit of info on the nutrients available in an 8 oz glass of pure celery Juice:

- 32.2 micrograms vitamin K (40 percent DV)
- 39.6 micrograms folate (10 percent DV)
- 494 international unit’s vitamin A (10 percent DV)
- 286 milligrams potassium (8 percent DV)
- 3.4 milligrams vitamin C (6 percent DV)
- 0.1 milligram manganese (6 percent DV)
- 44 milligrams calcium (4 percent DV)
- 0.1 milligram riboflavin (4 percent DV)
- 0.1 milligram vitamin B6 (4 percent DV)
This data, available through Dr Josh Axe, shows us that celery juice offers a reasonable amount of vitamin K, vitamin A and folate.
So why would this nutritional profile support improved functions in the body?
Anthony William says that celery can not just be viewed by its nutritional profile, but rather should be seen as a powerful healing "herb" that contains "sodium cluster salts" which he claims can kill off pathogens responsible for the symptoms people may be experiencing.
So how did I feel on my 21 day celery Juice protocol?
Initially, not a lot different, as I do tend to drink green juices daily, and enjoy a very plant-centric diet. But by Day 7 I started to notice a few subtle changes. My skin clarity was improved, AND I began having much deeper sleep cycles at night, whereas previously I would be wakeful or restless at 3 am.
By Day 14 I had seriously noticed a change in my response to foods that would normally irritate me - I have an intolerance to avocado and corn which no longer seemed to be an issue. Additionally, I noticed I no longer craved the second coffee I usually choose to have each morning!
Were my sleep patterns, adrenals and digestive system being supported by those magical sodium cluster salts? Not sure - but my energy levels were higher and my mind much clearer, even without the added caffeine.
